Pie Iron Rueben Sandwiches

This crispy, melty, flavorful sandwich is an old favorite and pairs well with cold beer or root beer!

Pie Iron Rueben Sandwiches

Ingredients

Per Sandwich

  • 1 Tbsp soft butter
  • 2 slices rye bread
  • 4-5 slices pastrami or turkey pastrami
  • 2 slices Swiss cheese
  • 1/3 cup sauerkraut, well-drained and squeezed to remove moisture
  • Thousand Island dressing

 

Directions

1. Ensure your campfire has burned for at least 10-20 minutes so there are areas of hot coals.
2. Clean and oil pie iron.
3. Spread butter on one side of each piece of bread. Place bread, butter-side-down, in each side of the pie iron.
4. Lightly spread each side with Thousand Island Dressing, then layer with one slice of Swiss, pastrami, sauerkraut and the other slice of Swiss.
5. Close pie iron and place in hot coals. Cook for 5-7 minutes, turning occasionally and checking occasionally to see if bread has toasted and cheese has melted.
6. Remove from pie iron and serve with additional Thousand Island dressing for dipping.
7. Makes one sandwich.
