Ingredients

• 1 c complete pancake mix
• 1 medium potato, peeled and finely chopped or coarsely shredded
• 1 small onion, finely chopped
• 1/4 tsp salt
• dash pepper

Directions

Prepare pancake mix according to package directions. Stir in potato, onion, salt and pepper. Spoon batter onto hot, lightly greased griddle and cook on both sides till done.
